Meet Us: Dede Oliver

Meet Us
Dede Oliver, Office Manager and Dog Lover



Have you noticed a new voice answering the phone in our office? That would be Dede Oliver, the Office Manager. She joined our crew a couple of months ago. So far, she's doing a great job of keeping Chef Alexa, Sam, and the rest of the staff in compliance with procedures.

Dede holds a degree in Business Administration from the University of Indianapolis. "It helps in the day to day management of accounts and people," says Dede. She is setting us up on a new, more efficient accounting program and streamlining office procedures.

Dede lives in Trafalgar with her husband, Mike, and her dogs Brody, Josie, and Tucker. In her free time, She enjoys reading and spending time with her family. She loves to go to the lake with her husband and her two adult children, Megan and Michael. Dede's all-time favorite book is Master of the Game by Sydney Sheldon.

Dede is proud to be a cancer survivor. Each year, she participates in Relay for Life. Watch for your opportunity to support her cause through us.

Her favorite 240sweet puff is Key Lime Pie (but she is looking forward to trying to the Banana Pudding and thinks it may be her new fave). The lobster sliders from the Chef's Selections Stations Menu is the best thing Dede has eaten since working with Artisan Foodworks.

Seared ahi tuna carving station
Whole sashimi grade tuna loin, seared and carved to order. Accompanied by wonton crisps, Asian pear slaw, premium soy sauces, ginger dipping sauce, wasabi, pickled ginger, and edamame.

New Orleans shrimp sauté
A family favorite of jumbo shrimp sautéed in real butter with garlic and herbs prepared continuously. Served with creamy goat cheese grits.

Lobster rolls*
Fresh Maine lobster combined with handmade lemon aioli, celery, purple onions, capers, and parsley. Served on a toasted petite brioche bun. Accompanied by sea bean salad: crunchy sea beans, tri-colored carrots, sweet peppers, roasted onions, and a black garlic vinaigrette. Select for a 5.00 a person upgrade.

For the Meat Lover
Barbecue slider station
Select two of these delicious meats: pulled pork barbecue, pulled chicken barbecue, pulled beef barbecue, and pulled lamb barbecue. Served with petite brioche buns, sweet/spicy pickles, porkbelly baked beans, and creamy coleslaw.

Chicago-style hot dogs*
Vienna beef hot dogs with poppy seed buns. Toppings include yellow mustard, chopped white onions, bright green sweet pickle relish, dill pickle spears, tomato wedges, pickled sport pepper, celery salt, and ketchup. Accompanied by ruffled potato chips with a sour-cream vegetable dip.

Charcuterie platter
Smoking Goose salami, artisanally cured meats, olives, house-made rillettes, pickled apricots, salted almonds, honeycomb, bread and rice crackers appetizingly arranged.

Decadent beef tenderloin*
Medium-rare beef tenderloin carved to order. Served with brioche buns and seasonal sauce assortment. Accompanied by crunchy pickled vegetables. Select for a 5.00 a person upgrade.

A “build your own” bar of carnitas, chorizo, onions, cilantro, radish, queso fresca, salsa, assorted hot sauces, and corn tortillas.



Perfect Poultry
Chicken souvlaki
Grilled skewers of the Greek treat with pita chips and tzatziki. Accompanied by a fresh Greek salad of romaine, feta, tomato slices, pepperoncini, onions, cucumber, and our own lemon dressing.

Maple Leaf Farms duck*
Seared duck breasts carved to order. Served with brioche buns and seasonal sauce assortment. Your choice of apple fennel slaw or charred corn salad.

Grilled chicken breasts

Sliced grilled chicken breasts accompanied by candied bacon, brioche buns, and seasonal sauce assortment. Served with cheesy corn. 

Eat Your Vegetables
Heirloom tomato station*
An assortment of multi-colored tomatoes carved and served to your guests. Accompanied by fresh basil, whole-milk mozzarella, vinegars, international olive oils, gourmet salts, fresh pepper, and crispy baguette slices.

Vegetarian paella
Saffron rice with peas, sweet peppers, zucchini, onions, tomatoes, eggplant, green olives, parsley, preserved lemons, and carrots cooked in our giant pans.

Mushroom sauté
A blend of woodland mushrooms sautéed with garlic, onion, and sweet peppers cooked in our big pans. Served with baby spinach, bleu cheese, and balsamic vinaigrette.

Take a dip in the Mediterranean
Lemon-basil hummus, babaganoush, and Lebanese garlic dip with carrots, celery, and pita chips. Accompanied by feta, dolmades, and Kalamata olives.

Incredibly Awesome
Fabulous fruit palm
A fruit fantasy of a palm tree made from pineapples and studded with strawberries, kiwi, grapes, oranges, golden pineapple and seasonal melon. Accompanied by a coconut dipping sauce.

Macaroni and cheese bar
Super-creamy macaroni and cheese for a “build your own” bar. Mix-ins include crisply bacon, truffle puree, scallions, creamery butter, roasted garlic, pimentos, jalapenos, Ritz cracker bits, Cheetos, and jalapenos.

Imported cheeses*

The Fine Print

Pricing subject to change without notice.  Booking fee of 500.00 for Monday through Thursday and 1000.00 for Friday through Sunday service.  Events further than 50 miles from our commissary may incur travel charges. No ID Required: Sophisticated drinks without alcohol

Recently, Sam (with her wonderful assistant Chef Alexa) shared her knowledge of creating sophisticated beverages that don't require alcohol with an audience at the Bartholomew County Public Library. It was a great event with enthusiastic participants who watched her make and then sampled some deliciousness. Here are the recipes she shared that evening. Cold Steeped Shrub

During Colonial times, this was a popular drink. Once Prohibition began, Americans revived this classic as an alternative to alcohol. The health benefits of apple cider vinegar have helped this drink become popular again. You can enjoy it as it is or with vodka. I add sparkling water to mine.

1 cup very ripe fruit (local watermelon is one of my favorites)
1 cup sugar
1 cup cider vinegar

Dice the fruit and coat with sugar. Let sit for 24-36 hours or until juicy. Strain fruit for juice. Mix the juice with cider vinegar. Let age in non-reactive container for one week. Use to create delicious drinks (1 tablespoon per cup of mixer).

Makes 10 drinks.


Hibiscus Spritzer

Everyone loves an elegant drink. You can use ginger ale, sprite, or club soda in this one. Also, you can substitute champagne for an alcoholic version. Sometimes, Chef Alexa will stuff the hibiscus flowers with fresh goat cheese for a fun appetizer to be served with this beverage, too.

2 ounces hibiscus syrup
4 hibiscus flowers (dried, canned, or fresh organic)
2 cans Sprite

In an elegant stemmed glass, pour ¼ ounce of hibiscus syrup. Drop one hibiscus flower into glass. Fill glass with Sprite. Repeat.


Serves 4. 

Virgin Mary



The Virgin Mary is a healthy way to start the day with nutrient-rich tomato juice and fresh vegetables. I like to enjoy mine with some sips being spicy and some not. That’s why I put the Old Bay on the rim.

3 cups tomato juice
2 limes, juiced (reserve a little for rimming glass)
1 tablespoon Worcestershire sauce
2 cloves fresh garlic, pressed
4 teaspoons grated horseradish
4 dashes of hot sauce
1 teaspoon white pepper
¼ cup Old Bay
4 stalks celery
4 carrot sticks
4 green beans
Ice


In a pitcher, stir together tomato juice, lime juice, Worcestershire, garlic, horseradish, hot sauce, and white pepper. Taste. Add more of any ingredient you would like (Remember that Old Bay will kick up the spiciness quite a bit). Put reserved lime juice and Old Bay into shallow bowls just big enough to put a pint glass into. Dip pint glass rim first into lime juice and then into Old Bay. Fill glass with ice and then tomato juice mixture. Garnish each with a stalk of celery, a carrot stick, and a green bean.

Makes 4 drinks.


Sparkling Apple Ginger Cider



One of the best parts of fall is the excuse to drink sparkling apple cider. Ginger syrup adds zing that really makes this drink pop.

¼ cup ginger syrup
1 bottle sparkling apple cider
4 slices fresh ginger, peel left on

In an elegant stemmed glass, pour ¼ of the ginger syrups. Drop one piece of ginger into glass. Fill glass with sparkling apple cider. Repeat.

Serves 4.
